Gnocchi al tarassaco

Scroll down fot the english version

Dandelion Gnocchi with Butter and Sage: A Healing and Rustic Dish 🌿🥔
Dandelion (tarassaco) is a wild plant famous for its incredible detoxifying and anti-inflammatory properties. While it carries a naturally bitter note, pairing it with the sweetness of yellow potatoes softens the flavor beautifully. Tossed in a simple butter and sage sauce, these homemade gnocchi offer a wonderfully delicate and authentic autumn experience.
The dough will be quite soft due to the moisture of the greens. The secret is not to add too much extra flour, but rather just dust the surface to help you shape them!
🛒 Ingredients
  • Yellow potatoes: 750g
  • Fresh dandelion greens: 300g
  • Flour: 100g (plus extra for dusting)
  • Egg: 1
  • Butter & Fresh sage: to taste
  • Salt & Grated cheese: to taste
👩‍🍳 Step-by-Step Instructions
  1. Boil & Wilt: Boil the potatoes for 30 minutes until soft. Meanwhile, wash and chop the dandelion greens. Cook them in a dry pan over medium heat—they will release their own water. Salt lightly and cook for 15 minutes.
  2. Mash & Mix: Puree the cooked dandelion with an immersion blender. Drain and mash the hot potatoes. Combine them and let the mixture cool for a few minutes. Add the flour, a pinch of salt, and the egg, then gently work into a soft dough.
  3. Shape: On a floured surface (or parchment paper), roll the dough into 5 or 6 ropes. Dust with a bit of flour if needed, and cut into gnocchi (make them as large or small as you like).
  4. Cook & Toss: Bring a pot of salted water to a boil. Drop the gnocchi in small batches (about 6 at a time). As soon as they float to the top, skim them out. Transfer directly into a pan with melted butter and fresh sage. Toss gently and finish with plenty of grated cheese.
